Crunchy IPA Kim Chi

Ingredients

  • 4 lbs daikon radish
  • 25 ml sugar
  • 25 ml salt
  • 25 ml garlic, minced
  • 25 ml green onion, chopped
  • 40 ml fish sauce
  • 150 ml chili flakes
  • 30 ml Citradelic IPA
  • 15 ml radish juice

First, peel the daikon radish and cut into round wheels, then cut the wheels into bite size cubes and add to a large mixing bowl. Add your sugar and salt both into the bowl and set aside for 30 minutes. Measure out all other spices and ingredients.After 30 minutes has passed, strain and save the liquid from the bowl of chopped radish (15 ml) into another bowl or container. Finally, add the rest of the ingredients and spices to the bowl with the daikon as well as the saved radish juice. Mix the daikon thoroughly and place into an airtight jar (or Rubbermaid container) continuing to press the daikon tightly into the container to ensure most air has been removed between the pieces. Leave on the kitchen counter for a period of 24-36 hours to allow time for kim chi to ferment. Once said time has passed, kim chi is ready to eat and be refrigerated.
